We produce 2 different cultivars, typical of our region, “Biancolilla” and “Nocelara del Belice”, which gives us the opportunity to produce three different types of oil, in strict compliance with the rules that allow us to adhere to the PGI system “Sicilia “:

The harvest, which starts in early October, is done either by hand or by mechanical means and the olives are cold-pressed by the day they are harvested.

the oil is immediately after stored in steel silos in a controlled atmosphere, which allows a greater conservation of the product, in terms of quality and duration.

The oil is then bottled, raw unfiltered, unless specifically requested by the final consumer.

 

The blend, is our flagship product, given by 70% of Nocellara and 30% of Biancolilla around, the one preferred by our customers, who appreciate the intense aroma of green olives, in addition to the marked hints of bitter and spicy, that make it an excellent raw seasoning.

And it is always our blend that has ranked in the top ten among the most appreciated oils in the world at the “Olive Oil Award” of the Biofach of Nuremberg 2018, one of the most important halls of exclusively organic products.
